Guyanese Lo Mein

 

Ingredients:

3/4 16-oz box lo mein noodles

1 tbsp canola oil

1 small onion, thinly sliced

1 cup red cabbage, shredded

1 carrot, julienne

1 cup  (bora)  chinese snake beans

1 medium red bell pepper,  thinly julienne

1 medium christophene, thinly julienne

1 cup bean spouts

1/2 scotch bonnet pepper, seeded and minced or hot pepper sauce to taste

1 large chicken breast, boneless, cut into cubes or 1/2 pound chicken wings (cut in half)

1 tbsp thick soy sauce

1/3 cup chicken stock

 

Instructions:

1. Bring to a boil a large pot of water and add noodles.

2. Lower heat to simmer and boil noodles until tender, Drain, rinse and set aside.

3. Heat canola oil in a wok or a deep frying pan and add onion, cabbage, carrot, and red bell pepper. Fry while stirring often until onion is translucent

4. Add christophene, bean spouts, bora beans and hot pepper and toss well.

5. Add chicken and fry until golden on all sides.

6. Mix in soy sauce and chicken stock and simmer 7 minutes, making sure chicken is cook thoroughly 

7. Add lo mein noodles to pan and toss well, combining all ingredients and making sure liquid is absorbed.
